The first ever Match Chocolate inclusion bar is our take on the ideal oatmeal cookie. When making this bar we had the crispy caramelized edges of an oatmeal cookie in mind. Don’t expect a crunchy chocolate bar full of cookie chunks. This is a smooth and creamy bar that reminds us of milk chocolate and oatmeal.
To make the Match oatmeal cookie chocolate bar we started off with our fudgey Bisiesto cacao beans from Nicaragua. We then increased the cocoa butter percentage to bring the creaminess forward. For the nuttiness of an oatmeal cookie we added toasted rolled oats into the grinder along with the cocoa beans. The caramelized edges of an oatmeal cookie is our favorite part but we weren’t getting that flavor from the raw Florida cane sugar we usually use. By toasting the sugar until it was a dark caramel and infusing it with a touch of cinnamon we accomplished the toffee flavor we were looking for. We topped it of with a sprinkle of salt to remind us of the salted butter in our favorite oatmeal cookie recipe, and the taste was just right.
